Eggs paired with truffle is like bread paired with butter. This recipe obviously isn't a traditional Italian recipe but rather California fusion. Eggs work so well because the eggs are like a fluffy blank canvas for the flavor of the truffle. We used milk with the egg for extra fluff and green onions for a punch of color. Eggs are the perfect place to start experimenting with truffle flavor combinations. Avocado maybe? The possibilities are endless.

INGREDIENTS
- Small flower or corn Tortillas
- 3 Fresh Eggs
- Green Onions, chopped for garnish
- 1 tbsp of unsalted butter
- 2 tbsp of Milk
- Salt and Pepper to taste
- 5.2 oz (150 g) Truffles USA fresh black truffle or 1 jar of Truffles USA whole truffle jars
DIRECTIONS
1- WHISK together eggs, milk, & 1tbsp of grated Truffle. SEASON with a pinch of salt & pepper.
2- HEAT butter in 6 to 8-inch nonstick pan or skillet over medium-high heat.
3- Pour in eggs and scramble. Remove from eat to cool
5- Meanwhile, place tortilla on a dry skillet of medium heat, 30 - 45 seconds on each side
6- Mix in shaved truffle to scrambled eggs and fill tortillas with eggs.
7- Shave truffle & sprinkle with green onion for garnish. Enjoy
